Licensee of the Year Finalist, Clive Price, runs Barons Pub Company, a collection of unique venues across Surrey and Berkshire. A long term BII member, and award-winning operator, his collection of pubs are leading the charge when it comes to sustainability.
Across the estate, Barons have implemented multiple changes, to save energy, cut waste and increase recycling. Some solutions have required investment in new systems, but some have been simple yet incredibly effective. For instance, adding timers to the water boilers and back bar fridges has been one of the most impactful, with 8 hours of power a day saved, across 5 or 6 fridges per site.
New cellar management systems that regulate the energy used, by switching off coolers when the rooms reach optimal temperature have been key, as well as the installation of “cooling curtains”, drastically reducing the area of the cellars that needs to be kept cold and reducing energy consumption by up to 40%! Similarly, water management systems have saved unnecessary wastage by reducing the automatic flushes in toilets and more.
Waste and recycling has also been a focus for Barons, with the sorting and recycling of every material a priority, from kitchen to bar, as well as the introduction of cardboard balers to save space and reduce waste.
Oil filtration systems and ceramic blocks in fryers have increased the life of oil in the kitchens, and the teams have analysed their menus in detail, as well as looking carefully at the plates that come back from customers, ensuring they are not serving additional unnecessary items that end up in the food waste bin.
All sites have Waste Matters Champions, who lead on the reduction of waste and meet regularly across the estate to ensure ideas and challenges are shared with everyone in the team and, wherever possible, meetings involving multiple sites are kept online to reduce fuel consumption.
Clive is rightly proud of the work that his teams have done in every single site to ensure the business is as sustainable as possible. They share the responsibility for reducing waste, reducing costs and doing all they can to protect local and global environments.
Congratulations to the whole team at Barons for their well-deserved Sustainability Champion recognition!
