Being one of our Licensee of the Year 2023 finalists, Lee and Keris De Villiers of The Pig and Whistle were crowned inaugural Sustainability Champions for their wonderful neighbourhood pub in Wandsworth, London. Being at their pub for over 10 years, Lee and Keris have made many changes over the years to make sure their business is as sustainable as possible.Recycling is something everyone should be doing but the De Villiers have taken that one step further. Not only do they separate all their cardboards, glass, food waste and general recyclables, but they also launched an initiative – SAVE it from the DRAIN.
SAVE it from the DRAIN is a scheme put in place to encourage customers to bring in their used cooking oil instead of washing it down the drain. In just the first 9 months of this scheme, they’ve collected and recycled 250 litres of used cooking oil. The Wandsworth Council have backed their project and have provided them with a grant. The Council have also announced that along with supporting their project, they will fuel and operate Council trucks with the used cooking oil collected from local businesses.
Alongside this very successful recycling scheme, Lee and Keris are using cost-efficient techniques to reduce their energy waste. By replacing energy draining bulbs with LEDs and only switching on lights and equipment during opening hours, they have saved a minimum of 14 extra hours of electricity that otherwise would be wasted every week.
Lastly, the De Villiers are always improving their DIY skills. Instead of throwing out old furniture, they have reupholstered all their chairs and redecorated the interior, giving The Pig and Whistle a new and fresh look – all without adding to landfill.
Lee and Keris De Villiers always think outside the box when it comes to being sustainably green. They believe “…it’s imperative to show customers, staff and the community as a whole a new way forward, encouraging everyone to do better.”
