Ye Old Sun Inn located in the village of Colton, has been run by BII Ambassadors and Licensee of the Year 2013 winners, Ashley and Kelly McCarthy for more than 20 years. Since 2020, the pub has merged with Kelly’s Spirit Distilling company and Ashley’s Chocolate shop, meaning guests can guarantee to be treated to homemade and locally sourced products that taste great!Ashley and the team will often change the menu to accommodate the freshest, in season produce. Anything that can’t be put to use, is then added to their composting area.
Produce is either locally sourced via sustainable means, or grown in their own garden, cutting down their food miles and carbon footprint. Included in the pub garden are dedicated areas to increase the biodiversity, making sure that wildlife still has opportunities to thrive.
Team members are encouraged to adopt sustainable behaviours in and out of the pub, whether that be through the use of public transport or bikes, or by educating them on the details of the pub’s recycling systems.
As for inside the pub, all lights have been changed to LED bulbs, appliances have been upgraded to energy-efficient systems and timers have been implemented on equipment, all contributing to a significant reduction in energy consumption.
